Mothers Day 2010

We took my parents and daughter Rachel out on Lion Rampant yesterday for Mothers Day. It was a perfect sailing day with SE winds of about 15 to 20 knots. We sailied around Green and St Helena Islands in Moreton bay and then anchored for lunch behind the Jetty on St Helena.

Dark and Stormy Scones

(A Kate Greenwood creation) makes 12 (use a muffin tin or similar because it is a sloppy mixture)

Ingredients

3 cup self-raising flour
1 cup buttermilk
1 cup ginger ale or ginger beer
2/3 cup crystallised ginger-chopped up into small pieces
30g sultanas soaked overnight in 40ml of rum
lemon peel from a lemon

Pre-heat the oven to 220 degrees centigrade

Method

Sift the flour into a large mixing bowl. Pour in the buttermilk and the ginger beer. Mix the dough loosely and let it stand for 10 minutes. Toss in the sultanas and the rum they were soaking in. Toss in the crystallised ginger and the lemon peel. Mix it all together. Pour or spoon the mixture into the muffin tins. and put into the oven for 10 to 15 minutes.
Watch the mixture Transition from dough into scones. If the scones look like Rampant Lions then the cook has been imbibing too much straight rum. Mix some ginger ale into the cook's glass of rum and then check the scones again.
